Latvia 2 Euro 2023 'The Ukrainian Sunflower'. Ukraine is the largest producer and processor of sunflower seeds, which are used to make sunflower oil. Ukraine produces more than 50% of the total global sunflower oil. In total, they process more than 4,400,324 tons of sunflower seeds per year! 17% of the maize, 18% of the barley and 19% of the rapeseed were also previously produced in Ukraine. Due to the current war these productions have been drastically reduced, making global food shortages even greater than before. Latvia is issuing this 2023 special 2 Euro coin to show its support for Ukraine. On the face of the coin a sunflower is depicted.
